AC will be switched off on slightest overheating in almost any car. So as a first point of concern as summer months are coming and we started hitting 37-38 degrees already, this seems a usual behavior

For Pajero thermostat, go with GCC specs thermostat as it set to open at around 68-71 degrees and same has been engraved on the thermostat metal outer body. One that says above 78 - 82 is not GCC spec

Running without a thermostat will help the engine to run cooler initially but it's not something I would recommend as a long term solution. It's a last resort technique used when the thermostat fails

Only a one month warranty? I suspect you were sold a scrap compressor that may, or may not, last even a month. I also suspect that the garage did some weird stuff to your electrics to prevent the ECU from deactivating the A/C when the engine gets hotter than normal. 

I would take the car to Barry to have him check if any modifications were carried out on any electrical system or circuit. This "repair" sounds fishy to say the least.
