It will affect a lot  in case you have a serious drop in coolant and you dont get the alarm and by the time u get temperature alarm , many things might have affected

The coolant sensor sends a signal to the cars ecu to help it determine fuelling. A faulty sensor can causing misfuelling can bring on all sorts of issues, some being,

high fuel consumption 

fouled spark plugs

damaged catalytic converter

Without the sensor, you car will run rich because it thinks that it is in warm up mode already.
