overheating on and off

the car get overly overheated in the desert. as it dose not happen on the road how do i diagnose the problem

any hints will be helpful

Check the AC fan and Engine fan clutch is working on two speed or not when overheating (you shud hear loud fan noise), If not then it means its bad and need change.
